Yianni Psarovarkas (John, The Skipper)As he is well known today as “The Skipper”, Yianni Psarovarkas was born January 28, 1939 in Athens, Greece the youngest of four children and the only son. John’s father, Peter Psarovarkas, came to the United States in 1885 and settled in Savannah, GA. Peter worked in Savananah first as a dishwasher and then moved up to a cook working beside some very well known chefs in small and large restaurants. Subsequently, after twenty years Peter returned to Athens where he met and married John’s mother and developed a large transportation business in Athens. His trucks were in heavy demand by the government at the onset of World War II. The government seized Peter’s business to use the trucks in support of the war effort. Fortunately he was able to secure a very reputable job as the cook for the Ambassador in the American Embassy. For years Peter spoke highly of the great opportunities in the United States. At the age of 16, John made the decision to set on on his life’s journey into the “Big World” by independently moving to New York. As he had acquired quite the talent in the art of baking and culinary arts, John began working as the primary chef helper to a very well known chef, Mikel, at the Constantine Greek Restaurant in Queens, NY. During this time John visited the Embassy in New York to find that due to his father’s American citizenship, John was in fact an American citizen. In 1962, with the Vietnam crisis looming, uncle Sam called upon him to serve his country in the U.S. Army where his talents were immediately recognized by senior officers and he was assigned as the head chef for the general officers in the officers mess in California. He received many accommodations and awards for his quality culinary arts while in the Army. John received his Honorable Discharge (with recommendations and accolades by his commander) from the Army after 2 years in 1964 and moved back to New York where he found a position with a well known Greek Bakery in the Queens.
